I made this super quick, easy Quinoa, Rice & French Lentil Curry last night so thought I would quickly share the recipe which usually lasts our family of four for two meals.
1 Cup Quinoa .and Rice
1 Cup French Lentils
I buy the Quinoa & Rice pre mixed from the supermarket but add the French Lentils. Boil together for at least 25 minutes. Rinse in hot water.
Celery Stick Chopped
1 tsp grated Ginger
1 Clove Garlic Chopped
Brown together in a frying pan or wok with a tbsp. Coconut/Olive Oil
MIX IN THE FOLLOWING:
2 tbsp. Curry Paste
1 tsp Curry Powder (we use mild to suit everyone in the family)
1 tsp Tumeric Powder
1 tsp Cumin Powder
1/4 tsp Chilli Powder
1 tsp Salt
Can of Chopped Tomatoes or equivalent fresh tomatoes chopped
Once the Quinoa, Rice and French Lentils are cooked mix well into your Curry Mixture.
Mix through chopped Spinach, Chard or Silverbeet to taste. and let the heat of the mixture cook lightly.
Garnish with grated cheese or bacon pieces if desired.
